St. Patrick’s Day Delights

 

These St. Patrick’s Day themed recipes are healthy, filling, and delicious.

A Green Breakfast – Monster Green Smoothie

Ingredients:

  • 1 cup of almond milk
  • 1 1/2 cups of raw spinach
  • 1 ripe banana
  • 1 tablespoon of peanut or almond butter
  • 1 tablespoon of honey
  • 1 cup of ice cubes

Directions:

Combine all ingredients in a blender. Blend until smooth. For added protein, add a scoop of vanilla protein powder.

A Green Lunch – Minted Pea Mash With Roasted Chicken

Ingredients:

  • 1 tablespoon unsalted butter
  • 2 bags (10 ounces each) frozen peas, thawed
  • 1/3 cup lightly packed fresh mint leaves, coarsely chopped
  • Coarse salt and ground pepper
  • 1 roasted chicken

Directions:

  1. In a large skillet, melt butter over medium-high.
  2. Add peas and cook, stirring constantly, until warmed through, about 5 minutes.
  3. Transfer to a food processor and pulse until coarsely pureed.
  4. Stir in mint and season with salt and pepper.
  5. Carve roasted chicken and serve on the side.

 A Green Dinner – Salsa Verde Chicken

Ingredients:

  • 1 cup basil leaves, packed
  • 1 cup cilantro, packed
  • ½ cup parsley, packed
  • ½ jalapeno pepper, chopped
  • 2 cloves garlic
  • 1 small shallot, chopped
  • zest of 1 lime
  • juice of ½ lime
  • 3 tablespoons orange juice (fresh is best)
  • salt & pepper
  • 1 lb. chicken breasts
  • extra virgin olive oil for grilling

Directions:

  1. Combine all ingredients except chicken in a blender.
  2. Blend until pureed.
  3. Combine chicken breasts with half the salsa mixture in a large bowl, toss to coat, cover and refrigerate for at least an hour, up to overnight.
  4. Heat a stove top grill pan over medium heat and grease with extra virgin olive oil.
  5. Place chicken breasts on grill pan and cook for about 5-7 minutes per side or until chicken is cooked through. This will depend on how thick your chicken is.
  6. Once cooked through, remove from grill pan and spoon remaining salsa over the top of each chicken breast.
  7. Serve with a lime wedge and garnish with cilantro.
