Fruit and Yogurt Parfait – 6 servings

Ingredients:

  • 2 (24 oz.) containers of non-fat greek yogurt (split into 1 cup servings)
  • 3 cups of sliced strawberries, blueberries, or other fruit (fresh or frozen)
  • 6 ounces of slivered almonds or walnut pieces
  • 6 portable glass or plastic containers

Instructions:

  1. Separate yogurt into (6) 1 cup portions.
  2. Top each yogurt with 1/2 cup of fruit.
  3. Sprinkle 1 ounce of slivered almonds or chopped walnuts on top.

These will do well in the fridge for up to a week. Wait to add the nuts until you’re ready to eat. This meal is a favorite of kids and grown ups!

Instant Scrambled Eggs – 6 servings

Ingredients:

  • 1 dozen eggs
  • 1 bag or bunch of fresh spinach leaves
  • 1 1/2 cups of halved cherry tomatoes
  • 1 1/2 cups shredded cheese

Instructions:

  1. Beat 2 eggs and pour them into a glass container (jar or mug).
  2. Add 1/2 cup of spinach.
  3. Mix in 1/4 cup cherry tomatoes.
  4. Sprinkle with a 1/4 cup of cheese.
  5. Microwave the mixture for 30 seconds, stir, and cook another 30 seconds, or until eggs are solid.
  6. Repeat for each serving you want to prepare or store the raw mixture in a fridge until ready to heat and eat.

Feel free to experiment with different add-ins (lean meats, peppers, onions). Coffee mugs are a great tool for this quick and easy breakfast.

DIY Instant Oatmeal- 6 servings

 Ingredients:
  • 3 cups of rolled oats
  • 1 cup of dried cranberries, dates, or any favorite dried fruit
  • 6 ounces of slivered almonds or chopped walnuts
  • 6 teaspoons of brown sugar

Instructions:

  1. Place 1/2 cup of dry oats in a quart sized plastic baggie.
  2. Add 2 tablespoons of dried fruit pieces to the bag.
  3. Add 1 ounce of nuts to the bag.
  4. Mix in 1 teaspoon of brown sugar.
  5. Seal bag closed and shake to mix ingredients.
  6. Repeat for all 6 servings.
  7. To heat and eat: Transfer ingredients from the bag to a microwaveable bowl and add 1 cup of water. Microwave for 1-2 minutes.

This meal is quick and is a great grab and go meal. Play around and experiment with different mix ins.
