Selecting and caring for apples

Select apples that are firm to the touch, have a good aroma and are free of bruises.

Wash each apple under running water and dry with a clean paper towel.

To prevent apple slices from browning, coat with lemon juice mixed with water.

Apples can last from 4-6 weeks if refrigerated to slow ripening and maintain flavor.

To prevent apples from absorbing unpleasant odors, store away from strong-smelling foods.

To freeze apples, peel, cut, and core, and then soak in ascorbic acid. Freeze slices on cookie sheet and place in a plastic freezer bag for future use.
