Chicken Tender Sliders – 8 servings

Ingredients:

Instructions:

  1. Top each slider with 2-3 ounces of chicken.
  2. Add tomato, lettuce, onion, and pickles.
  3. Spread the top bun with condiments of choice.
  4. Be sure to add a heaping side of vegetables or a piece of fruit to make a complete meal.

Pack condiments and veggie toppings separate. Kids can put them together themselves.

For a grab ‘n go option buy extra chicken and buns and freeze individual portions.

DIY Lunchables – 8 servings

Ingredients:

  • 2 pounds of all-natural sliced turkey, ham, roast beef, or other lean deli meat
  • 8 slices of cheddar cheese (or other favorite cheese variety)
  • 8 servings of whole grain crackers
  • Apples, oranges, pears, pineapple, grapes or any favorite fruit variety
  • Veggies cut into sticks (carrots, celery, zucchini, grape tomatoes)
  • 2 tablespoons of light ranch, italian dressing, or french onion dip.
  • A food storage container with compartments.

Instructions:

  1. Separate deli meat, crackers, and cheese into 8 servings.
  2. Portion out fruit into 1 cup individual servings.
  3. Add as many veggies as you want.

Who says lunchables are for kids only? Parents can add a few slices of deli meat, another serving of veggies, or a handful of nuts for a satisfying meal.

Use a cookie cutter on the meat and cheese to create cute shapes your kids will love!

Colorful Pasta Salad
Ingredients:
  • 1 (12 oz.) package tri-color rotini pasta, cooked and drained
  • 1 cup of cherry tomatoes, sliced in half
  • 1 can black olives, sliced
  • 1/4 cup red onion, finely diced
  • 3/4 cup parmesan cheese
  • 6 fresh basil leaves, cut into strips
  • 4 tablespoons basil pesto
  • 1/3 cup low-fat creamy Caesar dressing
  • 1/4 teaspoon of each (black pepper, salt, and garlic powder)
  • 1/2 cup pistachios

Directions:

  1. Cook pasta and coat with Caesar dressing while warm. Add the rest of the ingredients (minus the pistachios) and mix.
  2. Top with pistachios. Keep refrigerated.

This recipe becomes a quick go-to on busy days when you prepare big batches ahead of time. Add some chicken or shrimp for a perfect dinner meal as well.
